This cooking style was developed to simplify recipes and make them healthier. The add broths and lighter sauces for health and taste. Portions are smaller and visually more appealing. Restaurant offer tasting menus and smaller portion of food. Food is brought from local farms and vendors.
Nouvelle Cuisine replaces heavy sauces with broths, herbs and healthy oils. Examples of these recipes are scallops with asparagus in lemon wine sauce, grilled duck with fruit compote, and seasonal soups and salads. Chefs use fresh seafood and poultry often in preparing this type of French cuisine. It is a departure from the traditional recipes in French cooking.
This technique focuses on presentation and visual appeal. Each dish must be plated artistically and become a work of art. Portions are smaller and tasing menus often offer several dishes to try. It offers more creativity and flexibility in cooking style.
